Sweet Potatoes with Pineapple and Marshmallows

It's sorta the sweet potato equivalent of a jello mold, but it's tasty. This recipe came from Willa Woodard (Granny Brown's sister-in-law) but I have many memories of Mom making it. Eventually, we switched to the sweet potatoes with brown sugar recipe for most family gatherings, but this is still a classic. 2 cups sweet potatoes, boiled until soft, then peeled and mashed 1 cup milk 1 small can crushed pineapple 1 tsp cinnamon Squeeze butter to taste (or shavings of a refridgerated stick) miniature marshmallows (enough to cover the top)

Mix all ingredients and spread into a greased pan (9x13?). Squeeze butter over the top or spread butter shavings.

Bake @ 350 degrees for 20-30 minutes. Add marshmallows to top and continue baking until top is browned.

Goulash

This recipe comes from Flossie Roberson, my aunt from North Carolina. It's been a staple in our family for forever. Feel free to leave out the green pepper and no one will really miss it. 1 lb. hamburger 1 onion, chopped 1/4 cup green pepper (optional) 1 tsp chili powder garlic powder (to taste) salt and pepper (to taste) 1 can tomato sauce 1 #2 can of tomatoes 1 cup elbow macaroni

Brown hamburger, onion and green pepper. Drain off any grease. Add chili powder, garlic powder, salt and pepper. Blend tomato sauce and tomatoes to remove chunks. Add tomato mixture to hamburger and simmer on low heat. Boil and drain macaroni, thenadd to burger and tomatoes. Simmer an additional 15-20 minutes.

Squash Casserole

Another Grandma Grimm classic. This is a squash casserole for people who don't like squash. It's almost sweet and not Weight Watchers friendly in the least. But it's quite tasty. 6 cups yellow squash, sliced 1/4 cup onion 1 can cream of chicken soup 1 cup sour cream 1 cup carrots, shredded 1/2 cup butter, melted 1 8oz. stuffing or bread crumbs package

Saute squash and onions and pour off liquid. Mix soup, sour cream, carrots, and butter. Combine squash, onions and mixture. Place half of bread crumbs on bottom of baking dish. Add mixture to dish. Cover with rest of bread crumbs.

Bake @ 350 degrees for 25-30 minutes.
