Corn Casserole

This is the Grandma Grimm recipe. The only way I've seen this made was in a deep casserole dish so most of the corn sinks to the bottom. It may do better in a shallow dish, but your mileage may vary. 1 can cream corn 1 can regular corn 2 eggs 1/4 cup milk 1/2 cup saltine crackers 1/4 cup melted butter 1/4 cup grated carrot 1/4 cup green peppers 1 tbsp chopped celery 1 tbsp chopped onion 1/8 tsp hot sauce 1/2 tsp sugar 1/2 tsp salt 1/2 cup shredded cheddar

Combine eggs and milk. Blend by beating. Add crack crumbs until liquid is gone. Add all other ingredients except for shredded chedar. Place in dish and cover with cheese.

Bake @ 350 degrees for 45 minutes.

Squash Casserole

Another Grandma Grimm classic. This is a squash casserole for people who don't like squash. It's almost sweet and not Weight Watchers friendly in the least. But it's quite tasty. 6 cups yellow squash, sliced 1/4 cup onion 1 can cream of chicken soup 1 cup sour cream 1 cup carrots, shredded 1/2 cup butter, melted 1 8oz. stuffing or bread crumbs package

Saute squash and onions and pour off liquid. Mix soup, sour cream, carrots, and butter. Combine squash, onions and mixture. Place half of bread crumbs on bottom of baking dish. Add mixture to dish. Cover with rest of bread crumbs.

Bake @ 350 degrees for 25-30 minutes.
